We had a delicious menu at the party and I wanted to share some of the recipes here as well. We sampled Watkins Tropical Salsa over cream cheese and that was a huge hit! The Tropical Salsa has this lovely Caribbean flavor of pineapple, bananas and chilies with a slight kick to it, but not too much. You can also use it to top grilled fish or chicken or dice up some mango and create a tasty mango chutney.
We also had tasty Tomato Basil Squares on Watkins Whole Wheat Pizza Crust. This is the first entirely whole wheat pizza crust I’ve tried that wasn’t heavy, dense, nor have an overly strong wheat flavor.
Tomato Basil Squares
1 Watkins Whole Wheat pizza crust, prepared as per package
2 cups shredded mozzarella cheese, divided
1/4 cup fresh parmesan cheese, grated
2 tablespoons fresh basil, snipped
1/3 cup mayonnaise
1 garlic clove, pressed
4 plum tomatoes, thinly sliced
Preheat oven to 375 degrees. Roll out pizza crust onto a baking sheet. Sprinkle crust with one cup Mozzarella cheese. In a bowl, combine remaining Mozzarella cheese, Parmesan, basil, garlic and mayonnaise. Mix well. Place sliced tomatoes on top of pizza crust. Spread mayonnaise mixture on top of tomatoes. Bake for 15-20 minutes or until top is golden brown and bubbly.
Summertime impromptu entertaining season is almost upon us, stock up on some Tropical Salsa or Whole Wheat Pizza Crust for your company! These will be crowd pleasers for sure!
